FROM REGALIS FOODS: For hundreds of years, Pedro Ximenez grapes have been dried under the Spanish sun and concentrated to produce a dessert wine. The vinegar produced from this wine shares these sweet, syrupy characteristics but is balanced by a delightful acidity and a long, full finish. This vinegar shines where a balsamic might, but is less sweet and offers more minerality. Consider using it drizzled over ice cream or fresh berries, or in a stonefruit salad with freshly pulled mozzarella.
