FROM OLASAGASTI: Salvatore Orlando is the mind behind Conservas Olasagasti. After moving from Sicily to the northern Cantabrian coast of Spain, he merged the identities of both the Mediterranean and the Cantabrian together. Even after four generations of their family making quality tinned fish, their ancient preserving techniques married with their focus of sustainably sourced fish remains as consistent as ever. Ventresca is a cut of the tuna coming from the belly, which makes for a distinct rich flavor.
