THE CIDER: Bone dry sparkling apple cider from one of the world’s best, Jacques Perritaz now stationed in northwest France’s cider country.

THE PRODUCER: The Cidrerie du Vulcain started its processing activities in Fribourg, Switzerland in 2006 (20 years next year!!!!), harvesting the fruits from the local orchard, namely apples, pears and quinces of old varieties grown on high stems and untreated.

The company's flagship products are partially fermented sparkling cider made using the "guillage" technique, similar to Clairette de Die, or corked cider from Normandy and Brittany. The ciders are produced in different vintages each year, depending on the available grape varieties. These ciders are always "pure juice," fermented with wild yeasts and coarsely filtered.
