THE WINE: A declassified rarity -- Klevener de Heiligenstein -- this is Alsatian Savagnin Rose (pink-skinned Savagnin that is an ancient ancestor also of Gewurztraminer though much more acidic) from organically cultivated vines planted in clay/limestone soils. Hand-harvested, the grapes are directly, pneumatically pressed. Spontaneously fermented and aged in a combination of neutral barrel (90%) & glass demijohn (10%). The wine is bottled unfined, unfiltered, no additional SO2.
THE PRODUCER: Our adventure began in 2020 in Vertus (Marne, Champagne) with a desire to create fine natural wines that showcase different grape varieties sourced from top quality vineyards across a diverse range of wine regions. Each cuvée is produced from grapes coming from estates we work with side by side. Grapes are coming from diverse regions (Bourgogne, Loire, Alsace, Beaujolais...) and are vinified and bottled in the Marne. Thus their appellation of origin can no longer legally be used and so the wines are sold under "Vin de France" appellation.
Sustainable viticulture, hand harvesting, spontaneous fermentations in oak or glass vessels without sulfites, allows us to craft unfiltered, fresh, natural wines.
