THE CIDER: Cidrerie du Vulcain's Poire (Perry) Comment is a perry made from late-season perry pear varieties (end of October-December) such as Plant de Blanc, Fausset and Cloche, Gaubert, Courcou, and Rouge Vigné. The pure perry juice is fermented on its own wild yeasts and coarsely filtered on white clay. Ancestral method without disgorging: partial fermentation in stainless steel and resin vats, then aging in bottle. No added sulfites.

THE PRODUCER: Cool climate with diversity of soils. The fruit is bought directly from the growers. The ciders are "pur jus" fermented on wild yeasts and coarsely filtered.
