THE WINE: 50% Cabernet Sauvignon, 50% Trepat. From biodynamically cultivated vines in Lleida, Catalonia, this light (and lightly sparkling) red is 50/50 Cab Sauv & Trepat. Short maceration, spontaneous fermentation. Bottled unfined, unfiltered, no additional SO2.

THE PRODUCER: Founded in 1993, Casa Pardet is a renowned winery located in the heart of Catalonia. Known for its commitment to biodynamic agriculture, this family-owned estate produces wines free from sulfites and other additives. Originally, the Torres family crafted wines for personal enjoyment, but under the stewardship of Josep Torres Vilamajo, the winery has expanded its production for a wider audience.
