FROM CARBONISTE:
THE WINE: 35% Albariño, 35% Pinot Gris, 15% Pinor Noir, 15% Chardonnay. To get a wine that is orange in color, we take white grapes (Pinot Grigio & Albarino) and treat them like a red wine. This wine underwent native fermentation while on skins for 7 days to extract both flavor and color. It was then pressed and barrel aged for 1 year. This aging softened tannins and developed the luxurious mouthfeel you'll love in this wine. The wine was blended with a little Rose of Pinot Noir, Chardonnay, and Albariño, was bottled, had its 2nd fermentation then was disgorged by hand. The resulting sparkler is juicy, rich and layered.
THE PRODUCER: After meeting at UC Davis, Dan and Jacqueline Person worked around the world, then around California. These experiences informed their perspectives on winemaking. Dan worked for Schramsberg Vineyards for 3 years, making traditional sparkling wines from California grapes. Based on that experience, Dan decided there was a need for a new interpretation of California sparkling wine. Jacqueline was concurrently making still wines from a variety of terroirs across the Golden State, terroirs that have inspired the vineyard selections for CARBONISTE.
