THE WINE: The grapes are picked by hand, sorted in the vat room before being destemmed, most often completely, are crushed to become must, a thick and heterogeneous liquid made up of juice, skins, pulp and seeds.

The must is lightly sulphurised, placed in concrete vats covered with glass tiles, ferments there naturally, without artifice, without adding anything to it (dry ice, yeasts, enzymes, vitamins, oenochemical products, tartaric acid, industrial oxygen, etc.) or removing anything from it (water) or subjecting it to nano-technological, thermal or industrial violence.

After three weeks to a month, the fine wine is drained by gravity, then placed back in the vat to undergo its malolactic fermentation, also natural, without inoculation, after the marc has been pressed. The press wine is blended or not with the fine wine, depending on the vintage.

After possibly passing through stainless steel vats exposed to the cold of winter, is then transferred to French oak barrels where it will be aged for around fifteen to eighteen months, naturally, without the addition of wood chips, oxygen or other artificial substances, protected from the air, racked at the end every three to four months, and readjusted with sulphites (final total SO2 between 50 and 90 mg/l.)

that are Natural because they do not undergo treatments contrary to the laws of Nature. Sincere because we say how they are made and how they are not made,
Authentic because they are neither doped nor modified nor disguised nor improved.

Vines cultivated without synthetic chemicals since 2006 (fertilizers, herbicides, pesticides, etc.),
Biodynamic grapes hand-picked to respect the plant and the terroir,
Juices and musts with low sulfites (or not) and that's it (no other inputs),
Natural vinifications (native and contemporary yeasts and bacteria) and without technology.
Traditional breeding (no air conditioning, manipulation or flavoring), without artifice,
Wines bottled raw, whole and living (neither fined nor filtered nor pasteurized nor sterilized).
