THE PRODUCER: In the south of the Jura, in the little know village of Passenas, Steve and Celine Gormally run a young domaine made up of only 6 hectares. Under the tutelage of Julien Labet, Celine has focused on wines made in the ouillé style, as apposed to the sous voile method the Jura is often known for. This is because they are all about terroir, producing a number of micro-cuvées that showcase Jura's under appreciated vistas. With the same gesture, they are committed to making natural wine, biodynamically. Les Dolomies takes its name from the magnesium limestone found in the area. The climate is semi-continental and the zone of the the vineyard is located at the foot of the first plateau where the vines are rooted in iridescent marl. The term "iridescent" given to this predominantly marly soil reflects the variety of colors due to the oxidation levels of iron, which is micro-disseminated in the formation. They range from purple/red to light green or white. In these iridescent marls we find banks of dolomite (magnesian limestone). These iridescent marls constitute one of the best geological supports of the Jura vines due to their ability to disintegrate, thus allowing a good penetration of the root network. They also constitute an excellent water reservoir. They are especially suitable for Savagnin and Poulsard but also for Trousseau. Covered with limestone scree, they allow a very good development of Chardonnay as well. Jacques Néauport, who was the 1st disciple of Jules Chauvet is an advisor for Les Dolomies vinifications.

THE WINE: 100% Savagnin, Direct press into stainless, aged on fine lees in old Meursault barrels.
