A characteristic that contributes to making this wine unique and giving it an unmatched biological character (intense and steely saline sensations in the mouth) is that the casks are full, always with wine from Sanluqueño vineyards, almost "to the touch", well above the level. 5/6 usual in the Marco del sherry. In this way, the yeast layer (very weakened by age and the lack of nutrients in the wine) of these vessels is not so extensive and can be maintained with the contribution of the few periodic sprays, fulfilling its function as a barrier between the wine and the intensely oxidative effect of air. On the other hand, the weakness and small surface area of the flower is not enough to maintain an intense effect on the chamomile, which shows some elegant oxidative notes, as well as an initial elevation of the alcoholic level, above 16%.
The actual average age of La Bota de Manzanilla Pasada 90 “Capataz Cabo” must be around 14 years. It is a complex and powerful wine, with balanced freshness and elegant oxidative notes that give it an unmistakable personality. It accompanies with great versatility a variety of dishes, from the most delicious (sailor stews and rice, beef jerky) to the most complicated (eggs with boletus, grilled vegetables, medium-aged cheeses). It is recommended to serve at around 12º C, always in a large glass.
