Cuvée Tradition is legendary amongst experienced French wine collectors for its texture, substance, and ability to age gracefully for a decade or more. It is a limited wine made exclusively with estate-grown, organic tibouren grapes, and a bit of grenache to meet Côtes de Provence blending guidelines. The vineyard, one of 18 Crus Classés of Côtes de Provence, consists of traditional goblet trained vines located close to the Mediterranean Sea in the foothills of the Maures mountains, overlooking Toulon’s harbor. The microclimate of Clos Cibonne is especially important to the uniqueness of the wines, as the proximity of the ocean brings much needed cool air to the vineyards in the summer months. Their location at the foot of the Maures mountains ensures good east-west ventilation, which is ideal for the health and balance of the vineyard. \u003c\/p\u003e\u003cp\u003eAfter an early morning manual harvest, the grapes are destemmed and directly pressed. The must goes into temperature-controlled stainless steel tanks, which are cooled to slow the fermentation process. The special microclimate of this appellation is influenced by the encircling pine forests, the mass of Mont Sainte-Victoire, and the Arc River. The vineyards were reconstituted after the invasion of phylloxera and many vines are over a century old. The Rougiers maintain the particular vinification methods developed and cherished over many decades. For generations the Mattioli have been cultivating the rugged hillsides of southern most Umbria. Located just outside of Spoleto, in the near-impossible-to-find borgo called Terzo la Pieve, today's farm is a scant 8 hectares in total; 2 planted to a mixture of local olives trees, 2 ha of farro and other ancient grains and ~4 ha of indigenous old vines. Vittorio Mattioli, his wife Anna and their daughter Annalisa live together with 3 generations of their family inside the tiny village overlooking the valley below with the high Apennine Mountains and Gran Sasso looming in the background. The elevation is some 500+ meters and the soils are a mixture of calcium and iron rich clay with outcroppings of tufo and travertine limestone. Though the total production of Collecapretta is only some 8000 bottles in a good year, the family chooses to vinify many different cuvee's in hopes of expressing the vineyard and grape varieties at their best. All the wines are made in much the same fashion: natural fermentation takes place in open-top cement containers without temperature control or sulfur additions. The wines then age for various amounts of time in glass-lined cement vats or resin tank before bottling in synchrony with the waning lunar cycle. There is no sulfur used at any point in the winemaking process. A native of the city of Catania, Salvo studied enology and began his career in 1981 as a technical and agrarian advisor to noted estates that today are universally recognized amongst the best in Sicily. But it is still working with and for someone else; Salvo wanted his own project to really make a wine that sings. A number of years ago, Salvo’s love of the grapes and soils of Etna led him to initiate a project called I Vigneri. It takes its name from an association that existed in the Etna region in 1435, Maestranzi dei Vigneri, an association of vineyard workers that greatly influenced the wine culture of the region. Along the way you’ll encounter the port, the people and the vines that dwell in Spain’s most tiny DO Getariako Txakolina. Since the late 1980’s, Julian Ostolaza and Itziar have tended to 17 ha of Hondarrabi Zuri and Hondarrabi Beltza that hang on pergolas along the Getarian coast of País Vasco. They are about as local as you can imagine, and the essence of this special region. They sustainably farm and produce the classic style of Txakolinas of the Getariako region – slightly effervescent, briny, incredibly dry and lively. The wines are produced in inox, with nothing added except SO2. Only 125km from the African coast, conditions here are extreme. A volcanic explosion that lasted from 1730-1736 covered the entire island in lava and ash 3-5 meters deep. Consequently, each vine must be planted in a hole or hoyo that breaks through that infertile volcanic crust of petrified lava to the organic matter that can nourish it. The wind, which acts as a natural fungicide, is so ferocious that each hoyo is surrounded by rock walls for protection. The flora on Lanzarote – including the vines – cannot grow up very high; there are not enough nutrients in the soil to support sprawling greenery. Yields are miniscule (16 hL\/ha) and each berry is concentrated with flavor. All vineyard work is done meticulously by hand. Some of the wines are certified organic, depending on the vintage.
