They are the 11th generation of the Bauer family to operate it and the lineage continues with their five children. Nature remains one of the most important foundations of the family winery. They recently obtained an Austrian certification for sustainability that mandates organic practices in the vineyard, as well as sustainable practices for the entire business, including CO2 emissions for the winery. It is a respect for nature every step in the production process. The old wine cellar on the property is still used, and the knowledge of their ancestors is kept alive like a treasure. The design is inspired by the 80’s, an era where Apple computers were the boxes everyone was talking about and Kraftwerk’s Computer Love album debuted.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PRODUCER: \u003c\/strong\u003eOrganic practices in the vineyards. This is a cool climate site that lays at the same longitude as Champagne Hand harvest. De-stemmed. Gently pressed and allowed to macerate for 12 hours to increase aromatics. The spontaneous fermentation lasted 22 days at a cool temperature in stainless steel tank. It remained on the fine lees until 12 hours before filling to keep the wine as young and fresh as possible. They set about restoring the olive groves and vineyards that mother nature was in the process of reclaiming, and the rest is history. To this day, only a small percentage of the acreage is planted as the choice was made long ago to retain the natural ecosystem of the mountain.\u003c\/p\u003e\u003cp\u003eTheir first vintage in 1971 produced only red wines, but together they soon realized that there was great potential in other indigenous varietals, especially Vernaccia, the historic grape of San Gimignano, a town that played an oversized role on the Silk Road for centuries, long before the founding of the modern Italian state. Sergio worked tirelessly to restore the olive groves, vineyards and fields of Montenidoli, translated as “mountain of little nests,” to their former glory and allowed Elisabetta the task of growing the grapes, making the wine and showing the world what they were doing and why they were doing it. He preferred to remain in the background. Sergio passed away in 2012 and Elisabetta shows no signs of letting up.\u003c\/p\u003e\u003cp\u003eElisabetta Fagiuoli is proud of the fact that her land has never seen the use of pesticides. She has farmed organically as long as she has had the property and can attest that previous to her it had been farmed organically. Given that her property is isolated on a mountainside, she has the added benefit of not having any close neighbors, relieving her of any concern about systemic, non-organic treatments being used in adjacent vineyards. The soil at Montenidoli was impacted greatly by the Ligurian Sea which extended into much of what is now Tuscany millions of years ago. You can still often find large prehistoric oyster fossils in the soil, many of which are on display in the winery. Owner Dario Serrentino has always enjoyed the contrasts of this coastal growing area, which he calls ‘a desert next to the beach.’ Over the years, lucky for us, he’s learned to coax extremely elegant wines from this receding coast of limestone, which, he says, is ‘the magic to produce wines with tension, freshness, and complex salinity.’ In Dario’s best vintages, his rosso and bianco wines have a tapering, svelte finish, that’s cool and salt-dusted. Drinking them is akin to a dive into the nearby Ionian sea on a hot summer day.\u003c\/p\u003e\n\u003cp\u003eDario has always worked on the family farm in one form or another (his heirloom almonds were actually his first love). Anima Mundi is a theory of Plato’s, translating to “the soul of the world.” Much in the way that the soul is connected to the body, Agustí sees wine as a way for us to connect with the Earth. For these wines, Agustí works without any additions or interventions in the winery, and uses clay anfora, stainless steel, concrete, and used French oak barrels for fermentations and aging. Pithy stone fruits, cantaloupe, dried citrus rinds, and sandalwood; the dried flowers on the nose extend into a long salty finish. It’s on the edge between an orange wine and a white wine, with 50 hours on the skins.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PRODUCER: \u003c\/strong\u003eFUSO is a PortoVino project in the spirit of what people from Europe still do today: once a year they visit their favorite local producer to fill up large glass demijohns that they later siphon off into smaller bottles at home. They are commercially unknown and therefore (most likely) barely financially viable. Finally, and most importantly: Ulli has to love them. Stein is more than a winemaker - he is a passionate advocate for the traditional, steep, slate vineyards of the Mosel. Winemaking with Ulli is refreshingly light on \"style,\" on some idea projected into the vineyards, and more about what the vineyards say to him. Certainly there is a focus on wines that are dry; lightness and zip are more important than gobs of fruit. Cut is more important than size. One last note of importance, due to his belief in the importance of old vines the family never grafted to phylloxera- resistant rootstock in the 70s when this practice was the norm. So Ulli now has a profound collection of ungrafted vines, farming around 10% of the ungrafted vines in all of Germany. In 2016 the young Philip Lardot moved to the Mosel and was taken in by Ulli. Philip found a mentor and a deep connection to the Mosel in Ulli Stein; meanwhile Ulli found just the right person to carry the torch at this curious estate. Philip, of course, makes his own Mosel wines in a style close to the style of Stein's \"Ohne\", Ulli will phase out these wines to give Lardot more space. Manni’s vineyards benefit from the mountain climate and steep slopes of glacial deposit that make up the Valle Isarco, the narrow valley to the northeast of Bolzano that is known for its fresh, aromatic whites.\u003c\/p\u003e\u003cp\u003eDescended from a family of farmers, Manni has no formal training in viticulture or enology but seeks to learn from each vintage in order to produce wines that are capable of giving pleasure while also reflecting the terroir from which they originate. In 2000, he made the decision to start bottling his own wine instead of selling to a nearby co-op. Since then, he has increased his holdings to 5 hectares, all hillside vineyards at altitudes of 650 to 800 meters, planted to Kerner, Grüner Veltliner, Müller Thurgau, Riesling, Sylvaner, and Gewürztraminer. Kerner, a cross between Riesling and Schiava (a local red grape), represents half of his production and perfectly exemplifies the house style of precision, freshness, class, and minerality. While the climate in Alto Adige is certainly a colder one with snowy winters, Manni finds that due to his vines’ southern exposure and the region’s hot summers, the sun is enemy number one. “I want my wines to be drinkable,” he explains.
